Cacao nibs oat flour cookies

These cacao nibs cookies were created in attempt to try out oat flour that I finally was able to purchase. It is very fine flour unlike one I get by blending oats on high speed in my blender.

Cookies smell amazingly because of all peanut butter in them. They are made with healthy coconut sugar and desiccated coconut, cassava flour. So they are gluten-free if you are sure that oats are processed in safe facility and totally vegan.

To make them, you will need:

  • 1 cup of oat flour,
  • 1/2 cup cassava flour,
  • 1/2 cup desiccated coconut,
  • 1/2 cup peanut butter,
  • 1/2 cup coconut sugar,
  • 1/4 cup cacao nibs,
  • 1/4 cup coconut oil,
  • 2 tbsp of ground flax seed mixed with 3 tbsp of water (helps to bind cookies the way eggs normally do),
  • 2 teaspoon vanilla extract,
  • 1 teaspoon baking powder,
  • pinch of salt.
