If you keep our dark 70% chocolate in dark cool place with temperature 15-18C with airtight container, it can be saved for years. However, these ideal conditions are hard to get in Thailand. Keep your chocolate in airtight container for months. If you see white strikes or spots on its surface, it means cocoa butter is separating. You still can eat the chocolate, but its temper was lost, and once out of the fridge, the chocolate will melt faster. You can use it for baking, making drinks, and yes, you can temper it again and give it gloss that was lost.
