Healthy morning muffins

No flour, no refined sugar, lot of fruits and nuts in these healthy sweets. Cacao enriched granola

Start your day with great homemade granola that you can mix up in 5 minutes, put in oven to bake for 1 hour and use for weeks to come! It features two favourite products: cocoa powder and cacao nibs! And all other ingredients are whole and healthy, and clean, and all that you can possibly want 🙂 Ingredients: 1 1/2 cup cut oats 1/4 cup cacao powder 1/2 cup dates 1/4 cup pumpkin seeds 1/2 cup cashews 2 tbsp coconut oil 1/8 cup cacao nibs 1/3 honey

Banana mango cassava flour bread

Another great recipe with cassava flour! This time it is sweet baking with bananas, mango and coconut sugar. All goody goodness for those who love to treat themselves with sweets! For this you will need: 2 overripe banans, 1 cup mango, 1 1/3 cup cassava flour, 1/3 cup milk, 1/3 cup coconut sugar, 3 eggs, 1 teaspoon vanilla extract, 1 teaspoon baking powder, 1/3 teaspoon salt, 1 teaspoon lime juice. Cacao nibs oat flour cookies

These cacao nibs cookies were created in attempt to try out oat flour that I finally was able to purchase. It is very fine flour unlike one I get by blending oats on high speed in my blender. Cookies smell amazingly because of all peanut butter in them. They are made with healthy coconut sugar and desiccated coconut, cassava flour. So they are gluten-free if you are sure that oats are processed in safe facility and totally vegan. To make them, you will need: 1 cup of oat flour, 1/2 cup cassava flour, 1/2 cup desiccated coconut, 1/2 cup peanut butter, 1/2 cup coconut sugar, 1/4 cup cacao nibs, 1/4 cup coconut oil, 2 tbsp of ground flax seed mixed with 3 tbsp of water (helps to bind cookies the way eggs normally do), 2 teaspoon vanilla extract, 1 teaspoon baking powder, pinch of salt. Chocolate carrot healthy cake

Another take on healthy chocolate cake! It is full of my favourite ingredients! No gluten and sugar. You will need: 250 gr cassava flour, 1 big carrot, grated, 100 gr chocolate, 30 gr toasted coconut butter, 30 gr coconut oil, 100 gr grated coconut, 120 gr powdered almonds, 150 ml almond milk, 150 hot black coffee, stevia extract. Yeasted coffee cake with mango jam

You know a good recipe by just looking at it. Today’s one takes effort to make, but totally worths it. If you like working with dough, you will be charmed. It also requires a freshly prepared jam. You can choose jam that you like but as mangoes are in season now, I worked with them. I took 5 full cups of mangoes, 1 cup sugar and splash of lime juice. I boiled it to reduce the volume and then added 2 tbsp of chia seeds. The brioche dough according to recipe is more than enough. I used only half of it, so you can cut ingredients in half as well. There are 3/4 cups of water, 1 tbsp instant yeast, 3/4 cup butter, 1/2 tbsp salt, 4 eggs, 1/4 cup honey, 3 1/2 cups flour. The prepared dough should rest for 2 hours before rolling it in rounds. Peanut butter cupcakes with peanut butter frosting

Peanut butter cupcakes, anyone? Share my joy today, because those were huge hit! I didn’t use all the frosting, and it was finished quite quickly being used as bread spread. I have several people with sweet tooth in my family 🙂 Ingredients: 1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 6 tablespoons unsalted butter, at room temperature 3/4 cup chunky or smooth peanut butter 1 cup packed brown sugar 1 egg 1 1/2 teaspoons vanilla 1/2 cup milk  As the original recipe states, you need to beat ingredients every so often before adding new ones. I used my hand beating mixer for that, and it those stages are not included in the video. Rye bread, no starter

Rye flour is hard to work with and normally recipes with this flour involves starter. At the moment of making video of this recipe I didn’t have a starter, so I had to work with what I had: yeast, flour. In this case, rye flour cannot be used by itself and have to be mixed with wheat flour. Ingredients: 150 gr rye flour, 325 gr bread flour, 325 ml strong hot coffee, 1 teaspoon instant yeast, 2 teaspoon powdered chili, 1,5 teaspoon salt, whisked egg. First you need to mix brewed coffee with 75 gr rye flour, let mix cook and add other ingredients. Please knead dough on clean surface for at least 10 minutes. Transfer to oiled clean bowl, cover and let sit for 30 minutes. Transfer to oiled pan for baking, cover and let sit for 45 minutes. Brush with egg and bake at 230C for 25 minutes. …

Tangerine chocolate cake

This one is must-do! It is my first very successful try of marrying stevia and chocolate. I added very little, so I cannot feel the taste of stevia or sweetness, but the cake is amazingly delicious! My (slightly changed) ingredients: 125 gr powdered almonds, 75 gr cassava flour, 4 tangerines (each is 100 gr), boiled, 5 eggs, 50 gr cocoa powder (make sure to take roasted cocoa powder for rich flavour), 1/4 tbsp liquid stevia extract, 2 teaspoon baking powder. Baking at 180C for at least 30 minutes if you bake one cake. If you separate it into muffin holds, the time can be 15-20 minutes. It is rich chocolate and consists of lot of tangerines. Gluten-free cassava bread

New cassava flour bread doesn’t consist of any other added starch unlike my go-to gluten-free bread. As with old recipe, I found it the amazing Ingredients: 1,5 cup cassava flour, 1/4 cup coconut oil, 3 eggs, 1/4 cup of very hot water, 1 tbsp sugar, 1/2 cup lukewarm water, 1 tbsp instant yeast, 1 tbsp salt. You will need to prove yeast first. To make this, dissolve sugar in 1/4 cup very hot water, than add 1/2 cup lukewarm water and instant yeast. Please don’t add all the mixture to measured flour. I was surprised when I saw this direction in the original recipe, but it is so, I could see that even I added too much of this. Try to mix it little by little.
