Cocoa powder testing

Last days I get to tried different samples of cocoa powder. Day after day. Once I was asked how is the new cocoa compared to yesterday’s one and I seriously couldn’t remember the taste of the past day.

But if I taste one after another, the difference appears very bright. One cocoa is astringent, not very bitter, but kind of sharp. Another one is soft and round, mellow and rich. Third one is loud chocolate taste, very rich and satisfying. They are not the same on the picture. One is the raw. Other differences can be fat percentage.

Can you say difference in cocoa taste? Do you have preferences? Like colour or anything else specific?
