Peanut butter cupcakes, anyone?
Share my joy today, because those were huge hit! I didn’t use all the frosting, and it was finished quite quickly being used as bread spread. I have several people with sweet tooth in my family 🙂
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter, at room temperature
- 3/4 cup chunky or smooth peanut butter
- 1 cup packed brown sugar
- 1 egg
- 1 1/2 teaspoons vanilla
- 1/2 cup milk
As the original recipe states, you need to beat ingredients every so often before adding new ones. I used my hand beating mixer for that, and it those stages are not included in the video. For the frosting, you need to beat 3/4 cup peanut butter, 1 cup butter, 1 cup powdered sugar, 1/8 teaspoon of salt, 1.2 teaspoon of vanilla. My kids certainly loved this combination!
