Rye bread, no starter

Rye flour is hard to work with and normally recipes with this flour involves starter. At the moment of making video of this recipe I didn’t have a starter, so I had to work with what I had: yeast, flour.

In this case, rye flour cannot be used by itself and have to be mixed with wheat flour.


  • 150 gr rye flour,
  • 325 gr bread flour,
  • 325 ml strong hot coffee,
  • 1 teaspoon instant yeast,
  • 2 teaspoon powdered chili,
  • 1,5 teaspoon salt,
  • whisked egg.

First you need to mix brewed coffee with 75 gr rye flour, let mix cook and add other ingredients. Please knead dough on clean surface for at least 10 minutes. Transfer to oiled clean bowl, cover and let sit for 30 minutes. Transfer to oiled pan for baking, cover and let sit for 45 minutes. Brush with egg and bake at 230C for 25 minutes.

I was seriously impressed by result of this recipe, so it became one of my favourite. Followed by its success, I immediately purchased a bread book of this author, and it is amazing! I feel armed to work with starters and bake more complicated breads.
