This one is must-do! It is my first very successful try of marrying stevia and chocolate. I added very little, so I cannot feel the taste of stevia or sweetness, but the cake is amazingly delicious!
My (slightly changed) ingredients:
- 125 gr powdered almonds,
- 75 gr cassava flour,
- 4 tangerines (each is 100 gr), boiled,
- 5 eggs,
- 50 gr cocoa powder (make sure to take roasted cocoa powder for rich flavour),
- 1/4 tbsp liquid stevia extract,
- 2 teaspoon baking powder.
Baking at 180C for at least 30 minutes if you bake one cake. If you separate it into muffin holds, the time can be 15-20 minutes.
It is rich chocolate and consists of lot of tangerines. It is very Christmasey baking.

I changed sugar to stevia extract because I don’t add sugar to any baking that I like to consume myself. I also had to add cassava flour because I didn’t have full 200 grams powdered almonds.
