Yeasted coffee cake with mango jam

You know a good recipe by just looking at it.

Today’s one takes effort to make, but totally worths it. If you like working with dough, you will be charmed.

It also requires a freshly prepared jam. You can choose jam that you like but as mangoes are in season now, I worked with them. I took 5 full cups of mangoes, 1 cup sugar and splash of lime juice. I boiled it to reduce the volume and then added 2 tbsp of chia seeds.

The brioche dough according to recipe is more than enough. I used only half of it, so you can cut ingredients in half as well.

There are 3/4 cups of water, 1 tbsp instant yeast, 3/4 cup butter, 1/2 tbsp salt, 4 eggs, 1/4 cup honey, 3 1/2 cups flour. The prepared dough should rest for 2 hours before rolling it in rounds.

The topping is 1/3 cup flour, 1/3 cup brown sugar and 2 tbsp butter.
